Our production partner Scelta Blanchaud Concentrates in Belfeld manufactures flavourings rich in umami using our Waste2Taste process. We use mushroom parts and residues from mushroom processing which normally go to waste – such as mushroom stems and cooking juice - to produce concentrate in liquid form. At EES in France, this concentrate is spray-dried into powder form.
Our concentrate serves as a mushroom base for soups and sauces. It can also be used as a flavour enhancer for a variety of dishes without imparting a pronounced mushroom flavour. It is a 100% natural product with the potential to replace monosodium glutamate (MSG) and reduce the use of salt. The concentrate contains 95% of the healthy vitamins and minerals from the mushroom. Tasty and healthy, in other words.
